Do not map whole filesystem by default, to limit exposure to potential malware
By default the whole filesystem is exposed as the Z: drive; this is unnecessary for most games and risks exposing important files to malware that slips thru Steam's verifications.

For any game that does need access to additional folders outside it's install folder and proton prefix, either include additional lines in the install script that setup those folders in specific, or let user use winecfg or whatever to setup the access manually.

The z: drive is Wine default. Access to the root filesystem is also available to all native games. Sounds like you want to sandbox all games. I think the unofficial Snap and Flakpak installers for Steam already do similar things to what you want (limit access of Steam and games) but also come with issues because they, well... limit access to stuff.
